Summer Lamb Shanks

Ingredients

  • Lamb shanks
  • Capsicums red green orange
  • Button mushrooms
  • Sweet soy sauce
  • Rice
  • Herbs –  Marjoram,Rosemary, sage the strong herbs as may flame
    Will need a good hand full of herbs

Instructions

  1. Lamb shanks
    Put in plastic bag and cover with sweet soy sauce. Massage meat put in fridge.
      ( I usually marinate overnight)
  2. Heat BBQ so is hot, place herbs on grill side of BBQ place lamb shanks on top
    Cover with baking dish.
  3. Let it smoke away turning to get flavour.
    ( you may get flames, so keep an eye on meat turning to sear each side)
  4. In a warm oven bake shanks for about 30 minutes. Or cooked to your liking.
  5. Cook capsicum and mushrooms on BBQ
  6. At same time cook rice ( I use rice cooker)
  7. Let lamb shanks rest bast them with liquid.
  8. Plate
    Make a circle with rice, arrange capsicum and mushrooms.
    Sit lamb shank in middle
    Drizzle with liquid from lamb shanks
  9. Enjoy
