
Ingredients
- Eye fillet
- Zucchini
- Potatoes
- Sweet chilli
Capsicum (any colour) - Butter
- Plum jam
- Moroccan spice
- Oil
- Sweet soy sauce (for dumplings)
- Herbs for smoking rosemary is great. I have used sage this time.
- Baking dish – big enough to cover meat.

Instructions
- Sear eye fillet on all sides till nice & brown on BBQ.
- Put herbs on Grill side of BBQ sir eye fillet on top cover with baking tray.
- To smoke meat cook to liking (med rear, med well done).
- Transfer to baking dish rest in oven on med heat.
- Cook and mash potatoes to taste. Set aside keep warm.
- BBQ capsicum & zucchini drizzle with oil sprinkle with Moroccan spice.
- Cook to liking.
- And plate – make a circle with Potato layer capsicum & zucchini top with sliced fillet.
- Sauce – mix plum sauce chilli & sweet soy together heat & drizzle over dish.
